Rubies in the Rubble have partnered with Virgin Trains to create this bespoke chutney as part of their shared commitment to sustainability. For this chutney they take the apples from on-board the Virgin Trains that are a smidge too bruised after a day of travel to be sold. Rubies then add their unique blend of seasonings and turn it into a delicious chutney. This chutney is then served on the First Class menu cheeseboard as well as the Ploughman's sandwich which is available from the onboard shop.
Each week they collect approximately 1,300 apples that would be thrown away from the train’s catering service and then turn them into a delicious chutney that is featured on the first-class menu.
Together they have saved over 137,000 apples which would otherwise have gone to waste. This makes a carbon saving of 6,000 kg of CO2E which is the equivalent of 158 train journeys from London to Edinburgh.
